Help with identifying why me steams are turning purple please

If they are getting so dry that the leaves start to wilt then you are underwatering, Even in crop steering where they sometimes like to achieve "bone dry" dry backs, you still never want to see sad leaves. The goal is to always have happy leaves.

I would add in another watering event 6-8 hours after your first.

Should I split it then? Half in the morning and half in the evening?

No, they just need more water.
Try and think about it this way.

Your plants are drinking 5 gallons of water in 12 hours. Less that 12 hours actually. So lets say 5g water = 11hrs
If you split that into 2 waterings with half the ammount. 2.5 gal = 5.5hr.

So if you feed at the start of the 12/12 cycle, you would need to do a 2nd feed of 2.5 gal about 5 hours later. 5.5 hours after that your plants have drank everything again and are sad. They now need a 3rd watering, and you've subjected them to underwatering stress 2 times in the day instead of once.

if they are getting that dry after 5gal i feel like you could easily just double that.
I would do a 2nd 5gal feed 6-8 hours after your first

Also please dont do just plain water. Just reduce your nute strength to 50-25%. You're not burning the life out of them so there is no need to do such a hardcore plain water flush.

I am told that to never do full plain water flush until last week of flowering. But hotrodharley suggested a full one for a week. I am on day 25

What youre seeing is not nute burn. That is likely damage from the underwatering events.
To be honest im surprised you dont have more dying leaves. Every time ive ran into a dry wilted plant, i always loose a few leaves that weren't able to recover.

There is no need to flush plain water. The only sign of over feeding right now is how dark green the leaves are. You're not burning or frying any leaf tips.

Actually in that same picture, there is a leaf out of focus right above the one you are holding. The very tip of that leaf is burned and crispy. That is nute burn, and having it be such a tiny tiny tip of the leave is a great place to be.

Just bring your nute strength down by 50% and let the dark green fade a little bit. If they start getting to light just bump up the strength 10% at a time.

Suspect you are feeding too often using too little liquid. What size container and how much are you giving? Meaning liquid volume.
As I am going through my TrolMaster to am seeing a spike of my CO2 in the night time . 2350ppm and then it drops when the lights come on. Do you think that maybe has something to do with it too?

I did see on my TrolMaster that the ppm are well above 2000 and they gradually go down to 1000 but maybe this has something to do with my plants acting weird and turning purple?

Why is CO2 on during lights out? They only use it during photosynthesis. As to causing the discoloration I have no idea.

My CO2 is off at night.but the plants are releasing a lot of it.
I have it set up for 1000ppm during daytime. But at night it goes skyrocket. During the day it’s 995-1040. I don’t know ‍

Try shutting it off an hour before lights go out.
