We'd all like to think it's that easy and I dont know anything about Japanese, other than tentacle porn, but I imagine if it's anything like written Chinese well, if ole CN don't get the stroke order right that app won't recognize shit.

This is me writing the character for "small" 2 times. Only 3 strokes. The first is correct stroke order. 2nd is incorrect order lol.

My Yakuza have gotten back to me. We can trust their translation. They also told me to never bother them with a translation again or they're going to take a toe.

I think it says High-Quality Knife. By the way, I also like swords and my favourite sword is japanese tachi katana because the curved blade provided a balance between precision and momentum and generated a very high impact.
