How can I tell when my flowers are ready to harvest

Pics are a bit too blurry for me to make a definite judgment, but it does appear to have a few ambers.
I normally wait until no more glassy trics and then chop.

Those hairs look white still. That's a good indication that they're not ready. Grab a microscope and check the trichomes. When they start turning Amber you're in the harvest window.
