yes you can over water in soil, seems everyone here that grows in soil says to let it dry then water. But I don't grow in soil so will let someone else answer.

I have also seen people use the pots that have a res and you just fill the res and it feeds from the bottom

Yes you can easily over water if your soil doesnt have enough perlite enough it.
I grow in soil and i go minimum 2 days before i water again sometimes 3-.4 I like using the finger knuckle in the first inch of soil to see if its dry as a gauge but what I feel really gives you a better judgment of whether your babies are thirsty or not is to weigh out your containers after watering them and then again in 2 days and see how much lighter they have gotten.

I use the weight method. Pick the pot up and if it feels light water it just a little. Small seedlings will grow better when the soil is slightly moist, and not cold. Make those roots grow and let them seek the water for themselves and do their job. Use a set of scales and measure weight when first potted because fresh bagged soil is moist enough for growth. Water the top until you get a little run off from the bottom and then leave it under the light for heat. Weigh it every few days until the weight returns to roundabout the original and water again and repeat for a few weeks.
