If my weed is still spongy can I take out of jar to dry out?

Yes, definitely. Some like to go even dryer, though don’t go below 58%. There’s no real recovery for too dry. Leaving moist buds out for a day or two will advance the dry as long as the ambient humidity is good (60f/60% humidity is the ideal, as I’m sure you’ve read).

You might also try the paper bag method. Works great and slows the dry. Put the moist buds in a brown paper bag for a day or two. Shake occasionally. This is my go to if buds are not quite ready to be sealed.

You can buy a strip of cheap hygrometers from
Amazon or elsewhere. Put those in the sealed jar and leave for a day or so to get accurate measurements. Freshly jarred bud also needs to be “burped” once or twice a day for the first couple weeks to let out the moisture that has been drawn from the inner bud. You can also try Boveda packs or Grove Bags, both of which help maintain consistent humidity for curing. Good luck!
