If you think about it like a tomato, right now your 'tomato' is mostly red, still firm, and has a small bit of green left in it. Could you pick it and eat it and would it taste ... Ok ? Yup. But if you leave that fruit on for just a wee bit longer, it'll gain some size, and the complex flavours will come out, the meat will be soft and it'll taste the best it can. Make sauce with unripe tomatoes and then with soft ripe ones. You will notice a big difference. same idea with the 'fruits' on a cannabis plant.
