It's going to be hard to get a really good idea what you like better without a cure. Make sure you keep your drying and curing organizd so you know what jars were harvested and when.
So your curing jars should be labeled> 60days, 65days, 70days.(these are just examples)
It's hard to get an actual idea of what the final product is going to be like the day you harvest-you have to do a 'quick' dry using a lightbulb or even quickly in the oven. That's why it's important to take notes and label your jars
For example, lets say at day 60 you decide to cut 1/3 of the plant down. Quick dry a little sample of that and write in your journal what you noticed immediately-taste, smell, etc. Then keep that 1/3 hanging in the same location, once they are dry put them in your curing jars and label '60days'. Then do it at 62 or 65 or 67(again these are just examples), keeping track of when you harvested everything by labeling your curing jars.
Since curing brings out the real funk, you might initially like the 60day-and it might smell/taste the best right off the batt with the quick dry, but after a good cure you might realize that 65days is better.
Make sure you testing/journaling your cure as well. Keep testing samples every couple days and pretty soon you'll have an idea of what you like. Make sense? It sounds like a a lot, but like I said if you plan on running the strain again you will know- "I like it at 65 days and cured for 3 weeks"
