I've seen my plants sleep just before dark many times. They get use to the schedule. Never seen it 2 hours out though.

I can't get your pictures to load in large size, but in general it is very common for your plants to take on a "sleepy" look at end of day, especially outdoors. No, they don't go to sleep but there are a couple factors at play, light levels and temperatures. Your plants will track with the sun and rotate leaves to optimize sunlight. At days end they tend to lay down which would put them in better position to catch late day light. When you have a large temperature decrease like at end of day or when a large thunderstorm blows in, the stomata close and the leaf structure curves just like an overwatered look. As the stomata open back up during the night, the leaf structure flattens again. So end of day is generally the worst time to make watering decisions if you are going just from the look of the plant.
