Well the bulk of building a DIY led panel is knowing how to interpret data sheets and some math ranging from basic arithmetic to calculus(depending on what you're doing). The main reason you're getting no replies is that video's are a weekly request and something that's already been done by many people building custom panels for aquariums and flashlights. They're just not going to hold your hand every step of the way.
Maybe ask some more specific questions? I'd suggest emulating a build that looks like it would fit your situation and get's results similar to what you desire.
spazatak- cobs are the simplest of them all. One driver per COB, A/Coutlet->driver->cob. If you need more light, simply add another driver/cob combo until you reach the desired levels.
