It will be magically transformed into Cubano's on Sunday with deli black forest ham, baby swiss, dill sackers & mustard.

We used to have a great restaurant in town that had amazing Cubano sandwiches. It was the first time I had tried them and they were really good. I really want to get another smoker. A black bear took my last one apart one night a couple years ago. Apparently the brown sugar and honey marinade I used that day smelled really good to a bear. Live and learn
I use a large throwaway aluminum pan as a drip/water pan. Works great. And you can just dump it and use it again, even a few times. I hardly get anything in the grease trap.I'm usually good about dumping out the grease trap under the grill as I learned quickly that forgetting to do it meant visitors on the deck. I did a bunch of BBQ chicken and I mixed Sweet Baby Ray's bbq sauce with brown sugar, honey and liquid smoke. I heard it rattle a couple times and then a huge crash. Damn bear flipped it over the railing. Totally my fault for not cleaning it out but I'm much more conscious of it now. I am really glad we don't have brown bears here. They're amazing to watch on the Discovery channel but I'm good on the face to face meeting.
What kind of smoker is it? Horizontal double barrel, vertical?I had to use a soup can for this one because the mounts holding the tray had rusted out. I like the disposable tray idea though. I need to find a welder that likes to smoke and have them build me a legit smoker.
