New and Improved TnT Foodie thread

My version of hutspot, stamped potatoes + large carrots and normally fresh cold yellow onions… yuck… so instead, red onions sauted in olive oil, s&p, balsamico, then caramelized in real butter and white sugar.

+ Italian kofta, which I don’t think is a thing but basically lamb/beef mince + basil oregano garlic onions s&p egg and worchestersauce.

+ a pool of beef gravy

I still on paper own a business so I got this access pass for wholesale store and the whole inflation, crimpflation/shrinkflation, greedflation thing hasn't bothered me one bit. Whenever I'm baffled by the price on an item in a grocery store I'm like f*k it, let's buy a dozen wholesale instead. As a result, I now make batches. Started with soup. Spent 4 hours on beef burgundy but ate it 3 times in 2 weeks, not including puff pastry rolls. Feels more rich than having money. Kinda like having a huge stash of weed bongsmilie Can make a roti pie in 20 min 2 out of 3 times. Near-magic. Next week I'll throw the other half of the hutspot above in a pan, make some onions, warm up a sausage and in 15min I got more than proper meal. Instead of what my wife calls 'empty calories'. It's like I've been doing groceries and eating wrong for most of my life. Pre-corona pandemic, I don't think we ever bought groceries for the next day. Like never.

Now I'm like awww I already planned what I'm going to eat next week, wish there were more days or meals a day. At some point I may have to skip on that ham-cheese chicken thing from the Aldi. There's two things I buy from Aldi, that chicken thing and dutch potatoes (meaning vaccuumed sliced potatoes with bacon pieces for taste). Next week I'm going get a bag full of chicken, more lamb/beef mince, and more beef brisket from my Turkish butcher (I saw him come out the back with half a cow on his shoulder once, don't get that at grocery chain) and then stew some food to get through the season.
 
My want for Nuremberger lebkuchen outweighs the tedium of their creation, so I embark to make cookies. Step one is candying lemon peels. I dropped half a vanilla bean in there this time, I don't usually do that.
