Yes that's what I'm thinking I want. The more I read about pellet smokers the less I want one. I want something that will smoke with wood chunks. A side loading smoker, I think.
Roasting a 6.25lb pekin duck today. Seasoned with Himalayan pink salt and fresh cracked pepper, rubbed with orange juice inside and out. Stuffed with oranges, onions, garlic, fresh orangelo thyme, oregano, sage, rosemary. (I hustled my herbs inside for the Halloween snow, and they are back outside doing great... love having herbs last this late in the season...)

Side dishes will be my special recipe spätzle and rotcol :)

In extra sad news. My smoker is crumbling apart. For as cheap a lil garbage unit as it was, it made for me some very good meals. I'm thinking of spending more than $100 this time.

What's everyone's smoker recommendation?
I'm in love with my pit boss - cost a pretty penny but can do everything a good smoker and bbq can!

I have one like this, found it on Facebook marketplace for $50 used. It does have a hot spot where the smoke comes in and smoking for a long time is tedious because of reloading the burn barrel.
I have one like that as well, I use a log placed across the grill right in front of the fire box to divert the heat up and over my ribs. It made a big difference.
