Vinegar. After a lit bit I'll core them and stuff with provolone and prosciutto then put them in olive oil.

They are! When I was a teen, my buddies dad would make a big jar of them. We'd get stoned and steal his dad's beer out of the kegarator. Then eat all the stuffed peppers and grill a whole bunch of good stuff. His dad was kinda a partier so the place was stocked
Gotta use a harder provolone, nothing soft. So damn good
