the CO2 makes the process work. If you expose your mycelium to light before full colonization you don't have much of a problem,it is only afterward when you are looking to get everything to happen at once. Mycelium makes HUGE amounts of CO2, so much that you could elevate the CO2 of a room with a couple of bags of mycelium for weeks. Your jars will be in the 10,000 ppm or more range - rememer CO2 is heavier than air. When I am working with jars and the jar is colonized I will literaly "pour" the co2 out of the jar. I gather you are working with thos pucks or cakes - if you had grain you would be able to shake them and speed up the process greatly.
