a couple of years on mine mellow them (chard) a bit and give some nice notes. Are Mosels, a variety that should be consumed in the first year?

A lot of people let their wines age too long. It's called stuck cork syndrome.
Ever do maple syrup wine?

Expensive as all hell and can be a pain in the ass to get to ferment out sometimes, but age it for a year+...

Had a batch went a bit "off" one time, distilled it and got maple brandy.

So little time, so many wines.

Sounds interesting but I have never made it. I have about a half acre planted with Pinot Noir, Pinot Gris, Chardonnay and Marechal Foch. Produces about 600 bottles a year. That and the blackberry wildflower mead I make from my bee hives pretty much fill me up. PNW beers are good too. That said, I'll keep an eye out for it. Last year was my first year growing and I was overwhelmed with how much comes off four plants. I like growing and making wine, beer, mj but it's a lot more than my head can handle. Good problem to have but gotta slow down some. I want to remember what happened yesterday. hic
