Should I defoliate the larger leaves to let light to the new growth?

In veg and the size of that plant, I don't think you need to worry about letting light in to the new growth. Probably just going to stunt the plants growth a little. Feel free to experiment though, only one way to learn.

Makes sense. I am going to wait a bit I have topped them a few days ago and introduced diluted nuts as well....so much going on...haha challenging phase for a newbie

Leave them alone and let them grow a bit before you do anything else. They look good though.

I agree, less is best right now. Sometimes it seems like they are stalling but stuff is happening in the soil (roots growing).
I try to leave as many leaves as possible because I think the plants need them to develop.
