im confused on where approx to put the third fan. lol maybe lack of sleep ... up all night working on the case.
If I was using that case I would have 2 exhausts. First one in the old psu opening as you have done. 2nd one would be in the top fan socket below the psu socket. I'd rig up a false front out of something, probably cardboard covered in reflective mylar, cut a hole in the top and mount a fan there and fit it about 2 - 3 inches behind the real front of the case. The fan will be able to draw cold air from the intake you already made at the front and it would be fairly lightproof too.
The idea is to have a flow of air across the lights and the plant canopy and on towards the exhausts. It's not scientific but it does work. Normally you should have equal pressure going in and out but you will need some kind of odour control and light proofing for the exhausts which will reduce their efficiency so it should work out about right if you use 3 similar fans.
