To start with Indica's and sativa's usually look very different. Most Indica strains are shorter and very bushy, Sativa's are typically tall and lanky. Another thing to consider is the distance between the canopy and light, If the light is placed too closely the plants will divert energy into growing out (bushy) instead of up, On the other hand if its too far away the plants will stretch to get closer to the light source. Either way its not a great thing, Light adjustment is important.

Another thing to keep in mind is some growers like to thin leaves, Some growers are very extreme about this which may account for some of the taller plants youve seen with few leaves.

Heres an example of sativa's stretching. A while back a friend of mine had a few extra clones from an almost pure sativa strain (cant remember the exact strain) that he needed to get rid of. I am more of an indica guy but didnt want to see them go to waste as he was considering just tossing them. So i got the clones home and after a day or so 2 of 3 werent looking too great, Since I already had some plants growing I decided to toss the 2 sickly ones. My other plants were a few weeks ahead of the clone and much larger so i threw the clone in the best possible spot with hopes it would catch up in size. By day 7 the clone had gone from 6" to around 24" tall, By day 14 almost 5 Feet! Come the third week the once puny sativa clone was literally touching the ceiling, I had to decide if I should top the plant to stop vertical growth or attempt to bend the stalk. Ultimately I decided to attempt to bend the plant into a giant arch in order to make more space for vertical growth, 1 more week of veg remaining. By the end of week 4 (other plants were around week six of veg) the sativa had put on close to another 2 Feet! Ultimately the damn thing would have ended up being around 10 FEET straightened out! The mostly indica strains that were vegging for roughly 2 weeks longer only reached around 48" tall. The difference between the indica and sativa strains was unbelievably obvious when comparing this 10' bean pole to the short bushy indica's.

The thing with removing some large fan leaves is to allow light to lower bud sights......other wise u end up with a bunch of scrawny bud sights hiding under a bunch of leaves come harvest time.
