please help me figure out what's eating my babies

The past 2 previous days, I noticed that The edges of 2 of my seedlings' leaves were bitten. THere was not much gone at all; just enough to make the edges of the leaves rough. My seedlings are 1-2 weeks old and most have just one additional pair of leaves; this was the one that got it the worst at the beginning.
Well today I go out there and notice that 2 of my plants have been chewed down to the roots, and the big one which had 2 additional pairs of leaves, had the biggest leaf chewed completely off, along with one other.

One thing I found interesting is the smaller plants and the original sprout leaves were not touched. They are all in 3" peat pots sitting on the ground outside.

For tonight, i put all of them on top of a milk crate, cleared all the brush around it, and soaked them in the Safer 3 in 1 spray. I also put a plate filled with beer about 2 feet from the crate.

I inspected the leaves very well, and they looked 100% healthy other than where they were eaten. There is very little yellowing other than underside one of the leaves that was partially eating. There is no spots or signs of spider mites, and the outside of the leaves were the only part ate... no holes through the leaves or anything.

Also, all of my pots have a ridiculous amount of rolly-pollies living in the holes in teh bottom of them.

Slugs seem to be a pretty good candidate, but i just wanna get some opinions.

Also, i was digging one of my holes today and on the outside edge i cut into a fire-ant home that was about 2" below the surface.. can I use this hole or do I need to dig another?
