The plants create their own food through photosynthesis(energy). The leaves are where photosynthesis takes place. Less leaves = less photosynthesis(food/energy). Only remove leaves if they are blocking bud sites, and they can't be bent out of the way, or if there's a lot of them hindering airflow.
Don't expect very big buds, with the amount of leaves missing, and the ones that are left are mostly fried.
Wait until pistils turn brown and recede, before thinking about harvesting.
Btw, definitely over nuted. Definitely nitrogen toxicity.
What medium are you growing in? Looks like soil.
