So I will add that I added a bit more p and k to my nutrient solution and then fed the plant today so I will post pics in a couple days to update on the red stem issue if they don't go away I would guess its either a sign of vigorous healthy growth or light intensity.
Red or purpling stems, not the fan leaf stems, are P deficiency i believe. I have a couple strains that get them. They still seem to grow pretty vigorously, but I wouldn't try flowering until they green up.

it doesn't look overfed in the normal light, it looks good. I would probably stop trimming the leaves like that though. think of the plant as a living thing. open wounds allow contaminants and infections to get in. If you want to defoliate you're better off using a clean sharp tool and removing the whole leaf at the stem. everything looks normal though. keep it up.
Never seen that before, only on clones to slow respiration.
