Is it normal for my grow to really stink up when lights are off ?

might be caused by the fans being off if they are hooked to the timer also

my plants barely smell at all, but then when i open the closet door back open to see em in the morning i get hit with a waft of skunk

so imo yes,

If your exhaust fan turns off during lights off, then yeah its leaking stink.
