Well OP did the cat at least leave a node or 2 from it's crazy topping antics for new growth to sprout from?
If it did then it's not a total loss. Now you can just trim them down and learn to do some training methods. You lost a little time but that's it. Just remember it might have lost a lot of growth up top. But down low your plants are still sporting a good root mass. So they'll spring back up really fast.
Any chance we can see the damage done OP? Also how old were the plants? Pot size etc?
