Well OP did the cat at least leave a node or 2 from it's crazy topping antics for new growth to sprout from?
If it did then it's not a total loss. Now you can just trim them down and learn to do some training methods. You lost a little time but that's it. Just remember it might have lost a lot of growth up top. But down low your plants are still sporting a good root mass. So they'll spring back up really fast.
Any chance we can see the damage done OP? Also how old were the plants? Pot size etc?

I lost a batch of seedlings of strawberry diesel to my cat. She never jumped on my kitchen countertop (that I knew of) so I naively kept them there. This morning I found her on top of my tent. She's going to drive me crazy.

They are actually doing quite well. The plant that was the largest plant he effectively did the FIM method on the main Cola and since it had started 3 sub colas lower on the plant. He did slow down growth for a few days since the plant lost so much leaf area, but is recovered well now. The other 3 didn't have near as much damage and they don't seemed bothers much.

I've since transplanted into larger pots and and using my buddy's Composted Super soil and they love it!
