A seedling has two nodes (one set of true leaves and one set of three bladed leaves. One of a pair of the first true leaves gets chewed off by a grasshopper. Is it worth keeping this seedling because of the heightened amount of stress and risk of turning hermie or male?

Has long has there is no damage to the stem the plant will just send new leave growth through.Cannabis is a tollerant plant and you will be supprised how much hammer one plant can take.If it is out side far from your house re~pot it and put it in a tree till it get to a decent size,You will find that by doing this the birds will keep all the insects of the plant.It is when the plant is young that you have problems with insects eating them once it get's past around a foot in height they are left alone.
