I grew my own food for years, canned dozens of gallons of red sauces, veggies, fruits every year. We had no hesitation pulling a 2-3 yr old pizza sauce (or whatever) off the shelf.
Not quite related, but in 2012 I responded to a CL ad for free canning jars. There were maybe 500 of them, every size and shape. Problem was, they were all filled with food. From the 1970s and 80s.
I took them all and spent weeks opening and dumping every kind of vegetable you can think of. Dozens of trips through the dishwasher.
Here's the thing; the 30 to 40 year old veggies smelled exactly as they should have. Maybe 5 jars had turned to mold under the seal. It blew my mind lol, and was weirdly disgusting. Like finding zombie veggies.
