Last night was Baked Tilapia w/ a freestyle vegetable, mango salsa topping
Served with steamed asparagus, wild rice, and a Rye IPA for the brew.
It was great, cooked the fish a little soft. (note to self get parchment paper)

Vegetable salsa topping.
Diced green pepper, onion, mushroom, habanero, ginger, lemon zest n juice, garlic, salt pepper, parsley, dill, celery salt, other pinches of herbs, saute in pan add mushrooms last(cover to speed up) throw mix in a bowl and add desired amount of premade mango salsa(mango, pineapple, red pepper, onion) or keep seperate

Thats what 37,500 yen worth of damascus steel looks like. Thanks bud, i love that knife, its single bevel hand forged. Ive never owned a sharper knife. I have one thats close, its a yanagiba sashimi knife, you dont really want to get your fingers in the way of either of them. Next on my list is a nakiri buti want one thats 10 inches and theyre usually only 7" of steel :( I have a bad habit of getting way to far into stuff :):):)

yeah knew it was damascus steel for sure.. some guy locally is selling a bunch of them on CL here.. just seen smaller pics they could be paky knock offs too..

got back from pt and am still in the 'super healthy' mood so I made soup and a huge ceasar salad. When the soup was cooking I thought "I'll have a couple bites of the salad while that cooks then take the picture for the thread" Well that didn't work out and I'm sure you don't want to just look at a big empty dish lol. It was good though :)

Tommorow i got chicken hearts done tapas style with roasted garnets and mushrooms with rosemerry comin if all works out well ;)

Pics took all night to down load but heres the chicken hearts from last night. My ankle biter loves em, he runs around saying, " can i have another chickn heart pweeeze " This makes me a proud father :):):)

I made rainbow trout with roasted cauliflower and sautéed potatoes and onions. I never think of taking a picture till after I've eaten. D'oh! I've got some monkfish that I think I'll braise in white miso tomorrow. I'll try to remember to snap some pics.

I was a head chef for 7 years and did the whole school thing. I love eating anything and everything as long as it tastes good, and everything tastes good to me just about :):):)

Hell ya, lobster fish lol i cant wait for pictures of this. I love that stuff, i used to cut fish for a while while working for Thomas Kellers old head chef Shawn at his raw bar. Id never eat monk fish raw but we served it and those things have some crazy teeth. Ill try and find a pic of some of the sashimi/ceviche fusion for you, i use to to make all this stuff, its art and fun in one :)

I had a whole pack of sausages with tommy sauce to dip in. :( this morning a whole (small) pineapple and 2 hard boiled eggs. tonight, drugs. maybe a sneaky duvel beer to go with.

and this is me on a health kick ;)

I made a yeast dough for meat rolls. Made a meat stuffing and wrapped the dough around it. Just got them out of the oven and they're delicious. I had to make sure the dough was evenly distributed for the bread to cook through. Served them with several condiments and a cole slaw. We will be snacking on them all day. I made a shit load.

I smoke brisket in the summer ad make sliced brisket sammies with bacon cream cheese hatch Green Chili strips, red onion, and tomato! homemade BBQ sauce!also bacon green chile stuffed tater tots
