Why do some plants grow faster than others?

I put 3 cheese seeds in to germinate a week ago, one sprouted overnight and I let it get about 1/2 inch long then put it in a jiffy pot...and it seems to be doing well...the other 2 seeds have not even split open yet? Same time I germinated a few bag seeds and one plant about 6 days old in 4 inches tall, the rest are just sprouts still...That plant has very wide leaves...I don't have another plant like it...so I'm eagerly watching it...

varying conditions. Some seeds can take a week or more to sprout. The rate of growth depends on lighting, soil, temperature, strain, and part of the world the strain originates from.
