If your guy is a Southern gentleman, then this doesn't apply. But if he suddenly says "ma'am" to you out of nowhere, be cautious. It's a sign that he feels like he's feeling stressed and knows he's in trouble.
This is false. I live far from the south but just like the propriety of using Yes mam and Yes sir.

Maybe I read too much Farmer Boy as a kid but there should be nothing wrong with this.
As for all the other words I would say it totally depends on that guys vocabulary. Or how often he uses those words as it is.
