Would 2 of those be too much light? My 4x4 flood table canopy is completely full and My 1 hlg550 doesn't cover the outside very well

Yeah it would be too much.

Best option would be to get a couple of the triple heat sinks and remount the boards you have off the 550 onto the bigger heat sinks.

It should be more than enough like that with better spread.

you think a 1000w hps would be better?

IF you could get both fixtures in place, they'd definitely need to be dimmed.
I don't think that you could use more than 600-700 watts before intensity got to be too much.

Been a few decades since ive run a 1000w hps, I used to run two of the 260w hlg kits though over 4x4 space and never had a problem with coverage, though I had the luxury of been able to space them a bit further apart than the 550 is.
Plus I think they added up to 560-570w total and im not 100% on how much more the 480w driver puts out past its listed advertised wattage.
I also used to grow 1 plant per 2x2ft space so if it was lacking coverage on the edge it wasn't noticeable like maybe it would be with 16+ plants per 4x4.

I still feel 2x 550 is too much light and though it would be better coverage in parts it wouldn't be even coverage due to the shape of them and the space your covering.

So a few more options would be switch to 600w driver and raise light a bit for wider spread, still going to be higher in the centre
or add some 4ft strips around the perimeter which would probably be the best option for giving more even coverage overall
or the original plan of triple heat sinks with the added option of switching to 320w drivers.
