I'll shoot you my favorite recipe for butt (or most any white fleshed fish really).My buddy just came back from a fishing trip in Alaska. He bought a small freezer from Lowe's to put 175 pounds of fish in it.
He gave me some king salmon, halibut and lingcod. I've already grilled the salmon. But I can't wait to try the halibut. I'm thinking I should pan fry it or bake it. Maybe even do ceviche?
