and will using promix (not soil) cause any issues in the root zone or with nutirents or ph buffering or additional shock issues related to transplanting into another or foreign type of substrate compared to the fox farm soil already used in the 3 gallon pot

No, shouldn't matter.
Once you up pot to the 5's - water around the core by watering the new "soil"......You might see a bit of nee from the plant for feed...just pay attention to what the plant is telling you.
I would be inclined to pH all in-going fluids to 6.7 and then water/feed.....The media will need the help and may require you to use a Ca/Mg - just look for the signs..
