My advice as a former Boring accountant is work out who is going to be buying the food. What demographic do they belong in and tailor your marketing towards them. If it's family's think what type of families their spending habits, what's important to them presentation and price. Then work your costs out. Work out how much it costs you to sell just one of your products and include your running costs as well as how much you expect to be paid per hour. Add your mark up on this then work out how many you need to sell to cover these costs and pay yourself. Now you know that's your target anything more is profit and anything less is a loss.You dont like cheese and crackers??
And yes, in niagara falls and toronto where food prices are jacked up, I believe families/individuals will be drawn to a simple meal/snack they know they like. Both cities have insane ammounts of foot traffic, tourists, people out for events.
And for profit, Ive worked out a portion size of 100grams of cheese (which is about 20 sliced pieces), and 20 crackers, costs me about $2.25, can easily sell for $5. Have not priced meats or even inquired about wholesale pricing from this cheese distributor.
Id also sell bottled water/ pop/ milk box which can be sold for a few times what I would pay.
Is it that bad of an idea? Because I just spent a few thousand on a truck....

This, good luck, working for yourself is sometimes not all that great but I understand wanting to attempt it!, you won't believe your overhead costs until you get into it (and the long hours).

How old are you?The goal isnt to become a millionaire I feel I should mention. I have no debts, my house is fully paid for and Im only 30 years old. I have a full time job currently, so I have time to convert the truck, prepare properly, test the "market" when Im ready, and then possibly make the full time leap if it feels right. Im only 30 years old, Ive not got much to lose I figure.
Im simply tired of having a boss, this seems like a great way to meet new people, set my own schedule and location, and with some hardwork maybe pull a modest profit. If I could match my 40k income after all expenses I would be happy
