Growing peppers for hot sauce

Hey guys,
Soooo... me n the kids have been growing peppers outside. They wanted to grow something, one of my daughter loves anything hot, and one of my sons loves salsa. So we grew some tomatoes, ghost peppers, cayennes, and jamaican reds... and brussel sprouts, but they got eaten....
Anyway, two peppers so far (one ghost and one cayenne) on each plant are almost ready for harvest, and more on the way. We wanna make hot sauce(and salsa depending how the tomatoes go). Ive been reading info like crazy, but wld love and welcome any advice on making hot sauce and storing the peppers we pick while waiting for more to ripen.
Also, if theres a better place for me to post this, plz lemme kno!

Second, regarding your hot sauce: here's a great video that outlines a cool process.

Im still kinda new to this, cld u help me? I found Gardening, i searched peppers. And i saw some of ur posts, i think it was show me yr garden. Shld i just start my thread under gardening?

Hot pepper jam is one of my favorites. Habs give it a good punch.
Most of my really hot peppers get dried and saved for adding to chili's or whatever i want to spice up. Got a jar of chocolate hab flakes that have lasted 2 seasons now.

I wouldn't erase it. You'll get better responses in the gardening forum is the main thing, lots of knowledgeable gardeners in there.

There's enough people being assholes on this site, and that's not my style.

Awww.... I had a coworker who's brother made awesome hot jam. Only time ive had it, my daughter has her heart set on hot sauce, but if i get enough peppers maybe ill do that too! Good idea! Thnks!

Thanks guys, both of these videos were good.... alot of similarities between all the recipes im finding, seems like the little things make the diff.. ferment or dont, char or dont, cook or dont. Its gonna b trial n error...wldnt have it any other way!
Anyway heres a really simple and fast one im gonna try also, if anyones interested....

I was talking pepper jellies on another thread tonight. The wife makes Cran-pepper jelly using cranberry juice cocktail and a couple of hot peppers. You boil the peppers with the juice and vinegar, but take them out. Sometimes we added whole cranberries.

But the traditional red and green jalapeno jam is our favorite. Most serve it with cream cheese and crackers. We like it on peas, or anything you would add pepper sauce too.

I'm a bit obsessed with fermentation right now, so if the question is to ferment or not to ferment...well, there's only one answer to that question in my mind. I've got a batch of sauerkraut brewing in a crock inside of a cooler...tomorrow will be 2 weeks, gonna give it a taste and see if it's German enough.

It's too easy for my train of thought to get derailed for me to take on long term projects like that.

It can be so simple. On something like kimchi or sauerkraut (or anything, really), you can ferment in a jar with an airlock...it's basically as "set it and forget it" as it gets. The health benefits can't be overstated, tons of probiotics for gut health and greater bioavailability of vitamins from the veggies, that and fermented veggies are delicious.

If you're ever interested, check out the "it's alive with Brad" playlist on the Bon Appetit YouTube channel. The videos are informative and funny.

google Habanero peppers they are hot as
I've grown them all, orange, red, and chocolate.
As far a flavor, the orange was probably best, made a mango hab sauce with those.
The reds went in my jelly, and like @too larry , piled it on cream cheese and crackers.
Chocolates made an good jerk rub, and go in my chili.

Even though they are all habs, they are very different from each other in heat and flavor.
