You're doing fine, don't think what you're doing isn't good enough, that will take away your enjoyment by raising your expectations too high.
One thing which will help you greatly is a pH testing kit. You can use it to check the pH of the water you're feeding, and the water coming out the bottom of the pots. This will give you a better idea of what's going on in the roots.
Try to find a local source of kelp extract (seaweed fertiliser), and some fish emulsion for more Nitrogen, your bigger plants look a bit hungry.
It sounds like your plants are getting enough sunlight, but is your LED really using 200w, and do you have it hanging at the recommended height above the plants?
