Are my plants underwatered or overwatered??

This is not necessarily true. You can get root rot and stun small plants by overwatering them. They'll let you know they're thirsty when they pot becomes light. Eventually they're get out ahead of the water and you can start doing feeding them daily or multiple times a day depending on your pot and plant sizes.
Not if you start in the right size container and move up accordingly. It is literally almost impossible to overwater Coco especially if it’s brand new

If the coco is completely dry on the top, you're getting close to wilt. If it's a tiny bit dry, that's a perfect time to water them.

I have taken all your advice the top soil dries within a day so I'm going to take too water g them every day, see how it goes with them for a few days or maybe a week

Sorry but I have to disagree. If you are getting root rot it is likely a result of poor drainage. Coco should be watered daily to runoff or even multiple times a day. I never lift my pots and use 30% perlite to make sure there is always O2 at the roots.

Elevating you pots definitely helps. I just went through this in a different thread a few days ago. It's not necessary depending on your setup. I'm going every other day in flower and they're thriving. But I'm addressing tiny plants here. There's no need to water them if the pots are heavy. The nutrients don't go bad overnight.
