I will risk setting the yolks in order to make real sure I have no uncooked whites.
I err on the side of coagulation.

I kind of like this company, from what I can see of it. They have several used Buchi's for sale ranging from $175 up to $1000, and above. Are those all Büchi brand, or some other brands too? I would be very tempted to try the $10 ones so long as they fit the unit. Seal prices are all over the place, from $10 to $100, depending on the model and availability, etc.
