I know you haven't seen it happen before so I was explaining it to you. The new growth leaves will start to thin and eventually pistils will form. You should start looking for them in about a week.

When your plants are growing in size they need lots of Nitrogen, if the plants run low the leaves will turn yellow and this will stunt the growth.
when the plant stops growing/stretching the plants don't need much Nitrogen
your flower nutes(banana) have got a low amount of Nitrogen.
