Some genetics can hermaphrodite from too bright of lights and or other stress factors such as Defoliation yes. If you haven't tried it on a particular genetic yet then I would consider always doing a test where you have a "control" plant that is not stripped and then strip the other plant and see how they respond.
I would recommend growing normal female plants vs AutoFlower so that you can take clones from the plants and grow them again knowing how they respond to training etc.. You should only get better and better results doing that as you can fine tune the plant and know how it grows and what it's sensitive to. Personally if plants herm at any phase of bloom I throw them in the trash and any cuttings I took as well. I don't keep around genetics known to hermaphrodite. Unfortunately the only surefire way to know if a plant is going to hermaphrodite is by growing it a few runs and monitoring it closely.
