How do you make the crust? And do you put the lid on during cooking?
That was store bought dough...but still a local company.

Dough is really easy. Basically water, flour, yeast and salt. I have a recipe somewhere but it's for probably about 80# lol then you need to let it rise in a fridge.


You need the cover on it to cook the top. Otherwise you just burn the bottom.

Nice. I figured you wanted the lid on. And I prefer a cold rise too. I have a recipe here that I follow. Mix it, ball it, and into fridge for 2-3 days. It can be used sooner though if you want. It can also be frozen, and then thawed and proofed too.

I actually bought a Kitchen Aid mixer mainly to make dough. I kept breaking the cheap ones. I've got the Hobart attachment also to shred cheese and shit too. Haven't made any in awhile though. Been lazy. Got all the shit though. Wooden and metal peels, stone, baking steel, etc.

All this looking at homemade pizzas is getting me motivated though, :bigjoint:
