good afternoon, folks! still coughing every once in a while today, but it feels like i've finally turned a corner on the christmas crud. i haven't smoked since 12/26, so just packed myself a little baby bowl to ease back into things today. cheers!
hope everyone is as dry and warm as you want to be. it's still spittin' out rain here, and 36*. i'm tucked inside and building a fire here in a bit.

Canadian bacon will happen this morning. It really ups the flavor profile.

I will agree with this 100% However, I’ve found that what Americans consider Canadian Bacon is often just ham. Cured and rolled in cornmeal is what we classify as the real deal

Sliced thick and done on the grill, then onto a nice soft kaiser. Deelish.

Deliciously. That’s how. It’s the perfect salty foil to the runny egg. My Jewish Wife won’t partake, but she understands my love of salted, cured breakfast meats My Cardiologist on the other hand, is less enthusiastic about it

It’s colloquially referred to as peameal here. You’d order a peameal bacon sandwich if you’re at the market, though what each butcher/purveyor uses to roll/coat I guess is up to them.
