Apples and onions…. interesting combo.Got some pulled pork from Germany and asked chatgpt's sous chef to pimp it up. Without providing it ingredients it suggested something using apple cider which I just bought to make relish. For all I know you all had this a million times, definitely new to me.
Caramelized Apple and Onion Compote Recipe
Ingredients:
(didn’t follow this exactly)
- 2 large apples (preferably a sweeter variety like Honeycrisp or Gala), peeled and sliced
- 1 large onion, thinly sliced
- 2 tablespoons unsalted butter
- 2 tablespoons brown sugar
- 2 tablespoons apple cider vinegar
- Salt and pepper, to taste
- A pinch of cinnamon (optional)

- Melt the Butter: In a large skillet, melt the butter over medium heat.
- Sauté the Onions: Add the sliced onions to the skillet. Cook them, stirring occasionally, until they start to soften and turn translucent, about 5-7 minutes.
- Add Apples and Brown Sugar: Add the sliced apples and brown sugar to the skillet. Stir to combine.
- Cook the Compote: Cook the mixture for about 10-12 minutes, or until the apples and onions are nicely caramelized. Stir occasionally to prevent burning.
- Deglaze with Vinegar: Pour in the apple cider vinegar and stir well, scraping any bits off the bottom of the skillet. This will add a lovely tangy note to the compote.
- Season: Season with salt, pepper, and a pinch of cinnamon (if using). Cook for another 2-3 minutes.
- Serve with Pulled Pork: Serve this warm compote over your pre-cooked pulled pork.

I had some very good pulled pork sandwiches from food trucks and at bbq fests but damn this was so much better than I expected. It just blends together into a taste bomb.
Got enough left for at least 4 or 5 puff pastry rolls.
Yeah that’s pretty much what I thought. Apples and onions… I normally use the juices from the pulled pork to melt some dutch apple syrup (normally used on slices of bread), mix it up and then put it back in the oven. Apples and pork… Makes sense there’s typically an apple in a the mouth of a roasted pig. I did not taste apples and onions though, just... don’t know, more like it had sauce on the pork. You my lady have sent me down a rabbit hole…. at bottom found a “ upside down pineapple pork butt “ . Probably be next weekend before I can cook it but it is happening.Similar thoughts and experience but then my mind immediately ran to pineapple with pork. I may have to try this!

I roasted a 14# turkey yesterday for the wife and I... We tore it up too and I think between the tryptophan and cookies made a few hours of my life foggy , like life suddenly went missing... Breakfast often fixes a lot of things though. Steel cut oats and yogurt is OK with me.I have chicken out for dinner also.
