Oh, pork chops are nasty, i'll not eat those, but i cannot say no to an overnight cooked leg/shoulder of pork. Out of this world. Sublime flavour. Add to that a shit load of crackling and some apple sauce and i'm in heaven. Leg of lamb with mint sauce is my favourite though.



sad to say rib of beef and t-bone/porterhouse are the two cuts of a cow i've never gotten around to eating. Never been able to justify the price. I do not buy beef if it is not of the highest butcher quality, so basically i do not buy any beef from the supermarkets.
yeah, growing up tip top, we surely weren't dripping in the money if you know what i mean, and my mom's, the grocery shopper, always bought the cheapest things she could to try and make a buck stretch with a family of six and all..
anyhoo's, she'd always buy the cheapest cuts of steak when i was young, i think that's why i'm such a big fan of a good steak when i go out to eat, or call take out like tonight...

i have to ask, what is crackling ttt??

Crackling is just the skin of the pig. You slit it, rub salt in, and when roasted properly it goes rock hard, and cracks if bent, crackling. One of the better things in the world!

My reasoning is different to that, my father has always had a LOT of money since becoming a lawyer, so we never had that issue in my lifetime, but i enjoy the best beef more because i spent many years as a butcher and fish monger suplying the london michelin star restaurants, so got rather used to the highest quality produce, but also because i cannot stomach animal cruelty. If we're gonna farm em for meat, then i will do what i can to make sure they actually live a semi-decent life. so i prefer to spend more on my meat but eat it less often.

in the states we have pork rines that they sell in vending machines.. not sure if they sell them in the uk or not, but they take the pork skins and fry them...

i have to say it's about the nastiest smelling thing i have ever gotten out of a vending machine.. i can't even get it past my nose to attempt to eat them..

yeah we call them pork scratchings, they do smell like shit but they taste quite nice on a rare occasion. Probably helped by beer. Think they'll probably kill you with the salt content though

As i say, Kuroi is my excuse to go bonkers with my budget. I bought the pork scratchings, beef jerky, biltong, and 5 peperamis :) I'll only buy peperamis when on offer though, got 5 in my fridge right now :) Walked into tesco once about a year ago and they were selling 5 for £1 for some unknown reason, i filled my fridge top to bottom :) These kinds of products are always great, as kuroi is very concious of her salt/sodium intake so i normally get to eat most of it :D We don't do mini cheddars though, for snacks we buy odities, awesome baked cheesey goodness, else we get jacobs cream crackers and copious amounts of assorted cheese and boursin and go crazy with the grill :D

I have a way of derailing threads when it comes to food.


Did someone say porterhouse? :) God i loved my old job.

I like going to the butcher and picking up 3-4 lbs of filet roast and cutting into my own fillets. Nothing makes a grown man more giddy than cutting into a 1.5 lb filet with a balsamic reduction or maybe mushrooms sauteed in Marsala whine and kerrygold butter.

Try spending 4 hrs butchering/processing a deer thinking about all the ways you're gonna cook it! Did that yesterday :).
