If you're watering by hand, in coco, you can feed two or three times a day. If you can fit that into your schedule then it will work. But that's why some people go to an automated drip system if they can't do it multiple times a day due to time constraints. But....you want to avoid multiple...

That's a fungus issue. So no overcrowding your grow area, keeps the fans going, buy some anti fungal remedy, and thin out some of the bigger shade leaves and possibly lollipop for even better air circulation.

That sux man I feel for ya. There really isn't a magical way to decrease a humid environment, without something to to alter it, like a dehumidifier or fans to help circulate air. Also, it looks like your temps are in good range though. Did your plant have powdery mildew or actual brown mold...
