And your plants looks like a classic ph problem. Double check your methods and instruments.
This is why I never mess with ph pens. Too wonky with calibration. Get a 4 pack of commercial grade test strips for 10 bucks and you're set forever. If not...

Your ph is way too high if it is truly 7.8
The notion that you dont have to ph your water in organic is only true if the soil is buffered(lime) and established(time, microbiology).
I would start there and over watering. All imo of course!

General organics line of bottled nutes are not the same as typical salt based ferts and wont kill our soil as much. They contain phosphoric acid which isnt too good for microbes but that's it. Not the same as adding salts to the soil.
This takes me back to my first grow 10+ years ago, now have 2 full rooms, all organic, worm bins, indoor compost, diy cultured bacteria and bokashi, and an arsenal of amendments.
Point being, I think you're on a great path! :D
Back on topic, I started adding a 5 seed blend from black swallow soil for cover crop and I'm not going back to bare soil. Makes so much sense to use and it helps with watering fabric pots.
