Hobby Mode is foremost for integrating the unit in a home automation system like home assistant, Node-Red et al. Before that you could flash the old Sonoffs to a degree but it was not that easy. But afaik you can use it standalone to avoid having to use the Ewelink app. Haven't ordered one yet...
