Even with big leaves, it shouldn't be droopy. Some of my fan leaves are bigger than my hand spread, and still don't droop. We would be better able to help you with a pic of the plant/s for reference, but barring that, I would say it sounds like you have either an overwatering or underwatering...

I wouldn't worry about it. Some people count their flowering from the day it's put into 12/12, and some don't count until buds actually start forming. Then there's different lights, medium, nutes, you get the idea. All in all, you're right on target.

You should have seen new growth within a couple of days, not from the cut but from the next two branches down.

A lot of strains have red in the stems, especially when the plant is younger - I wouldn't worry about it unless there are other problems along with it.

Well, I've seen some of our better growers chop the main colas, and continue flowering the rest, without an issue - so I would think you would be ok doing it the other way too, gotta be less stressful I think, to cut off smaller side branches, than the top one.

Start with feminized seeds - you may get the occassional hermie, but not a male.
