Those fans work but not very good. That 1000w looks really close to those pots so id atleast move it up some. A 400w will probably be a lot cooler than that 1000w you have now.

Theres a place around here also called Pizza House that is one of the best ive tried. They use some kind of sweeter sauce and the bbq chicken pizza there is awesome.
