So to explain what it is your trying to do, basically you are clipping the first single blade leaves and they get stunted promoting more growth above them? Do you continue clipping leaves after the first ones or does the idea not carry over when the plant is no longer a seedling?

If your confused about how much to water, let the pots dry out (not completely, so dont kill your plants) and lift the pot. You'll see its light, now start watering it. I'd go semi slowly and let the water soak in, and when I start actually getting runoff I can see how much water I gave them...
