Philo I don't think it will matter that much if you're just going to be repeating the process and weaving it again.
I say experiment with two sides of the plant, pull one back up into the new hole, and leave one.. this way you can be the almighty genius when this question does pop up again :]
when it comes to LST, make sure if you're doing the arch, to tie a security string or whatever around the base to hold the plant stable, so you dont rip the roots out.
then what I did was, got a thumbtack thingy, placed it into the side of my pot, tied a string around it, then looped it around the part of the plant i wanted bent down, then back onto the thumbtack.
this let me turn and either tighten or release the plant depending on how it looks.
In my opnion, you can't do LST wrong and you'll get the hang of it once you start seeing how your plants are growing.
