The closed containers are the key to it not adding humidity. It's the exact same thing as the evaporator coil in an a/c unit except for the refrigerant being used is water and the condenser is the person replacing the ice. A a/c unit will lower the rh by just the natural effect of cooling down the ambient air because cooler air carries less moisture. In reverse, if you just added bags of ice you would have created an evaporator cooler, which uses moisture and air to cool area's with really dry humidity by adding cooler moist air. Great Idea.
With this being said if its cool why not just suck fresh cool air in from outside. I live in the north east and by running lights at night and sucking fresh air in, there is never an issue and I'm not as far north as you. Just curious, because I also grow in a shed and maybe missed something. Even the 1-5 days it hits above 90 outside, my shed stays about 5 degrees below because I planned lights off during the peak heat and with no windows it stops a lot of solar day heating through them.
